Pasta with Ricotta, Peas and Mint

With the above ricotta and peas from our share this week I made a quick simple pasta dish (using some fresh mint from my dad’s garden, Happy Father’s Day!):

Overall, it was a lil dry.  I should have reserved some of the pasta water.  Instead, I drizzled some olive oil on top, mmmmm.

Directions:

Boil pasta according to package directions, toss in peas for last few minutes, drain and toss in ricotta and chopped mint.  Sprinkle with Parmesan, salt and pepper and serve.
